What is Tosa Binchotan?

Tosa binchotan is the highest quality charcoal produced in Kochi Prefecture and is a specialty with a tradition dating back to the Edo period. It is extremely hard and burns for a long time at high temperatures, and its far-infrared ray effect allows food to be heated slowly to its core. This allows the flavor of the ingredients to be brought out to the fullest, resulting in a crispy outside and juicy inside, making it especially suitable for yakitori, yakiton, and other grilled dishes.
